Ingredients

  1. 1 boxlemon flavored cake mix
  2. 2large eggs, room temperature
  3. 1/3 cupvegetable oil
  4. 1 tsp.lemon extract
  5. 1/4 cuppowdered sugar

Steps

  1. 1

    Preheat oven to 375° F. Place parchment paper on baking trays and set aside.

  2. 2

    Mix together the cake mix, eggs, lemon extract & oil.

  3. 3

    Cover bowl with dough in it with plastic wrap or tinfoil and refrigerate for around 30 minutes.

  4. 4

    Once chilled, drop teaspoon sized balls of the dough into a bowl of the powdered sugar and roll until dough is covered.

  5. 5

    Arrange dough balls on prepared trays about an inch or so apart and bake for 7-9 minutes.

    Allow to cool on the tray for a few minutes, then move to a cooling rack. Store at room temperature.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
