Steps

preheat oven to 200°c.

take the whole chicken with skin remove head part.

Now apply a mixture of salt,pepper& oil to the chicken.

tie the legs & wings of chicken.

now take abaking tray grease it with butter & add some sliced onins,celery& carrots to it.

Now put the chicken on the tray & put it in the oven till get light brown colour on all the sides.

after baking take out the chicken put it aside.

Now make roast gravy with brown roux(butter & flour).

now put butter in pan & equal amount of flour cook it till brown now add brown stock to it & add some juices of chicken & vegetables of baking tray.

let it simmer check for seasonings & strain it.

now put it on sides of chicken.
