  • 1/2onion
  • 1/3green bell pepper
  • 1deseeded jalepeno
  • 3/4 cupmixed shredded cheese
  • 3 lbtenderloin
  • 2 lbbacon

Steps

  1. 1

    get a nice bed of coals on the grill or smoker roaring to cooking temps.

  2. 2

    butterfly 3lb pork tenderloin roast.

  3. 3

    have vegetable mix sliced n diced. spread even layer in center of butterfly and cover with cheese

  4. 4

    close butterfly securing every " with toothpick.

  5. 5

    wrap with thick cut bacon.
