Ingredients

  1. 2 cupFrozen sweet soy beans(edamame)
  2. 1 can(15 ounce) kidney beans, rinsed and drained
  3. 1 can(15 oz.) garbanzo beans, rinsed and drained
  4. 1/2 cupthinly sliced red onion
  5. 1/2 cupchopped fresh cilantro
  6. 1/4 cupOlive oil
  7. 1 tspFinely shredded lime peel
  8. 1/4 cuplime juice

Steps

  1. 1

    prepare soybeans according. to pkg.

  2. 2

    drain and rinse in cold water

  3. 3

    combine beans, onion, cilantro in large bowl

  4. 4

    whisk lime peel, juice, oil and pinch of salt

  5. 5

    pour over beans and toss to coat

  6. 6

    Cover and refrigerate up to 24 hours

  7. 7

    Stir well before serving
