Ingredients

18 servings
  • 2 1/2 cupwhole wheat flour
  • 2/3 cupsugar
  • 2 tspdouble acting baking powder
  • 1 tspbaking soda
  • 1/4 tspsalt
  • 1/3 cupreduced calorie margarine diced
  • 3/4 cupplain nonfat yogurt
  • 1/3 cupfrozen orange juice concentrate
  • 2eggs
  • 1 1/2 cupfresh or frozen blueberries
  • 1 cupfresh or frozen cranberries
  • 24dried apricot halves, chopped

Steps

  1. 1

    oven to 400

  2. 2

    spray 18 non stick muffin cups either spray or line with paper liners

  3. 3

    in large bowl combine flour, sugar, baking powder, baking soda, and salt

  4. 4

    using pastry blender or two knives to cut in the margarine until mixture resembles coarse crumbs

  5. 5

    in medium bowl, combine yogurt, orange juice concentrate, and eggs.

  6. 6

    stir into flour , mixture until just combined

  7. 7

    gently stir in blueberries, cranberries, and apricots

  8. 8

    spoon batter into cups filling to thirds full

  9. 9

    bake until golden and toothpick comes out clean....15 to 20 minutes

  10. 10

    cool on rack 10 minutes....remove from pan and continue to cool on rack
