  • fresh vegetables
  • 1 lbfresh green beans with the ends snapped off
  • 2 bunchasparagus
  • 1 largeegg plant
  • 1 smallfresh pineapple
  • 2 headraddichio
  • 2 largeportobello mushrooms
  • 2 eachzucchini or yellow squash
  • 2 eachonion
  • 1 lbbaby potatoes
  • 4 mediumcarrots
  • 2 mediumyams
  • spices
  • 5 tsplowrys season salt
  • 5 tbspolive oil
  • 1 tbspblack pepper
  • 1 tspitalian seasoning
  • 3 tspbasil pesto
  • 3 tspBBQ sauce

Steps

  1. 1

    wash and pat dry all vegetables

  2. 2

    preheat grill

  3. 3

    peel and cut ends of onions

  4. 4

    cut raddichio in half lengthwise

  5. 5

    slice eggplants lengthwise into 1/2 inch (1 cm) slabs

  6. 6

    cut the tough base ends of the asparagus

  7. 7

    If desired asparagus may be wrapped with bacon

    lightly brush each of the above vegetables with olive oil

  9. 9

    lightly dust with salt and pepper to taste

    beans and unwrapped asparagus into grilling basket

  11. 11

    brush a thin coat of bbq sauce on the eggplant after turning it over

  12. 12

    peel and cut in half lengthwise (without coring) the pineapple

    place all vegetables on grill (face down first if there is a difference)

  14. 14

    grill root and tubers like carrots, yams, and potatoes first

  15. 15

    add a small amount of pesto to each mushroom after flipping over

  16. 16

    place vegetables on grill (face down first if there is a difference)
