Steps

Bring a large pot of water with 1 Tsp salt to boil (for pasta). While water is coming to temp, prepare other ingredients.

Chop onions med size pieces. Open and drain liquid from beans, peas and pimentos. Set all aside.

Once water is at full boil, cook pasta according to package directions, careful not to overcook

When pasta is ready, drain and return to same pot. Cover & set aside until meat is ready.

While pasta is cooking, Melt margarine in large skillet (14" or bigger works best) over medium high heat

Add chopped onion (and optional Garlic) and saute just until onion starts to turn translucent. About 2-3 minutes.

Push onion to sides of skillet and add meat to center hole created

Brown meat, without disturbing onion, while chopping meat with spoon to break up large pieces.

Once meat is mostly brown on outside, incorporate the onion into the meat. Add 1/2 tsp salt & 1/2 tsp pepper. Continue Browning/ sauteing mixture until meat is cooked thru, about 2-3 min.

Add beans, peas and pimento, stir.

Add 2 tsp Cajun spice. ***Note; pay attention to the type of Cajun spice you use. Some have salt, some don't, check ingredient list & sodium.content on back. I use Tony Chachere's and it has a fair amount of salt. I add 1 tsp at a time, then taste. You may need to adjust this up or down based on how it tastes at this point.

Stir all meat ingredients together until mixed and at even temp throughout. Careful not to mash the peas.

Pour meat mixture over pasta is large pot and mix together.

Let sit for about 5 min, then taste and add salt/pepper to your liking (or omit if good as is). Serve.
