  • 2 tbspOlive oil
  • 1 largeonion, chopped
  • 3 clovegarlic, minced
  • 1 largecarrot, chopped
  • 1 largesweet potato, peeled and cut into cubes
  • 8 cupchicken broth
  • 2 cupdried lentils
  • 14 1/2 ozcan diced tomatoes
  • 1 tsporegano
  • 1 tspsalt
  • 1/4 tsppepper
  • 15 ozcan chickpeas, undrained

  1. 1

    pour oil in pot. set to high and heat oil. add onion and garlic. cook until onion is tender

  2. 2

    put all ingredients except chick peas in slow cooker on low for 7 hours. stir in chickpeas during last 30 minutes
