  1. 2 tbspOlive oil
  2. 1 largeonion, chopped
  3. 3 clovegarlic, minced
  4. 1 largecarrot, chopped
  5. 1 largesweet potato, peeled and cut into cubes
  6. 8 cupchicken broth
  7. 2 cupdried lentils
  8. 14 1/2 ozcan diced tomatoes
  9. 1 tsporegano
  10. 1 tspsalt
  11. 1/4 tsppepper
  12. 15 ozcan chickpeas, undrained

  1. 1

    pour oil in pot. set to high and heat oil. add onion and garlic. cook until onion is tender

  2. 2

    put all ingredients except chick peas in slow cooker on low for 7 hours. stir in chickpeas during last 30 minutes
