Making pastry: add shortening and boiling water together and mix until a smooth paste like texture.

Add flour and salt and mix until it becomes a dough.

Roll out small pieces of dough and layer into a muffin dish.

Using a fork, pierce the bottom of each tart before partially cooking in oven at 200°C for 5-10 mins. You only want to partially cook the pastry.

Chop red onion and fry in oil. When soft add brown sugar and tomatoes.

Cut up chunks of goat cheese add to the tarts and place back in the oven until the cheese has softened and the pastry is brown.

Remove from oven and add the onion and tomato topping.
