If you have never made inexpensive goat cheese before, here is our 2 hour recipe to make fresh goat cheese with a pan and a kitchen towel and a thermometer. All you need is lemon juice, vinegar and goat milk.
To make the cheese tart, butter filo dough in a baking pan, goat cheese , basil, cherry tomato on top, drizzle honey over. Walnuts optional. Baked in 45 minutes.

Ingredients

Cheese 2 hours, tart 45 minutes
2 people, 4 portions
  • To make a cup of fresh goat cheese:
  • Quartfull rich goat milk, not ultra pasteurized
  • 1/2 Cupfresh lemon juice, meyer lemon preferred
  • 2 Tbsapple cider vinegar
  • 1/2 Tspsalt
  • For the tart:
  • 12 sheetsFilo dough, frozen or fresh
    California Farm Dairy Puff Pastry Filo Dough
  • 1/4 poundUnsalted Butter
    California Farm Cultured Butter and Buttermilk
  • 1 cupfresh Goat cheese
  • 12Small sweet cherry tomatoes like sungold
  • 12Fresh Basil leaves
  • Optional Tbs of chopped walnuts
  • 1 Tbswarm Honey to drizzle over
  • For a goat cheese party spread, add:
  • Salmon goat cheese salad

  • Drunken goat cheese
    California Farm Tapas: Drunken Goat Cheese
  • Sour dough baguettes
    California Farm Soft Crust and Hard Crust Sourdough Bread
  • Equipment: dutch oven, collander, digital thermometer, kitchen towel, half size baking sheet, brush
  • Cost: goat milk $5, butter $1, lemon, vinegar $2, filo dough sheets $1, cherry tomatoes $2, basil, honey $1, $12 tart for four, $3 per portion

Steps

Cheese 2 hours, tart 45 minutes
  1. 1

    Heat goat milk to 185F degrees, stir in lemon juice and vinegar, cool. Pour through kitchen towel in collander, tourniquet the towel to wring the whey out of the cheese, sprinkle salt over. You now have a cup of goat cheese. Done.

    Preheat oven to 350F degrees. Brush half size baking sheet with molten butter, butter the filo sheets, fold edges, spread fresh goat cheese in center, cover with 12 fresh basil leaves, walnuts optional, put halved cherry tomatoes on leaves, bake 45 minutes.

    Quarter the tart, sprinkle optional walnut pieces over, drizzle honey on top, serve warm.
