preheat oven to a medium heat

peel and slice one large or a couple of small onions
- 3
peel and slice potatoes to half an inch thick
- 4
slice the tinned corned beef or you can use pre-sliced corned beef
- 5
in a large casserole dish layer up the corned beef, then the onions, then the potatoes, repeat until all ingredients have been used. I like to finish with a layer of potatoes.

crumble the oxo cubes over the top and pour on boiling water to dissolve the oxo (stock cubes)

put in the oven and leave for one to two hours.

This is lovely with bread to dip in the gravy.
