
Peperonata with Goat Cheese

Coat large saute pan with olive oil

Add 2 diced onions, pinch crushed red pepper and kosher salt

bring to medium heat. Cook until onions are soft and aromatic. About 8-10 mins. Stirring to not brown

Add garlic and cook additional 3 mins

Add bell peppers (seeded and cut into 1/2 inch diamonds)

Add water and salt

Cook until peppers have softened and water has evaporated, another 8-10 mins

Add tomato paste, smoked paprika and sherry vinegar; stir to combine

Cook u til peperonata comes together and looks tightened up and slightly thickened (6-7 mins)

Remove from heat and let cool

Serve with goat cheese over toasted baguette and garnish with chi es
