Ingredients

  • 1 lbNavy beans (dried)
  • 5 cupChicken stock
  • 4 tbsp(1/2 stick) butter
  • 1 tbspMinced garlic
  • 3/4 cupDiced onion
  • 1 1/2 cupChopped green chilies
  • 1 lbBoneless skinless chicken breast
  • 1 tbspGround cumin
  • 1 tbspDried oregano
  • 1 tspPepper
  • 1 tspWhite pepper
  • 1 pinchRed pepper flakes
  • 1/2 bunchCilantro leaves chopped

Steps

  1. 1

    Rinse beans well. Cover with cool water & soak 2 hours, drain. Place beans in large pot with chicken stock & bring to boil over high heat.

  2. 2

    In a sauce pan heat butter over med heat. Add garlic, onion, & chilies. Sauté for 5 minutes. Add chilies mixture to pot w/ beans.

  3. 3

    Add chicken, cumin, oregano, pepper, white pepper, pepper flakes & cilantro.

  4. 4

    Lower heat to medium & cook stirring occasionally about 1 1/2 hours.
