Lemon Garlic Roast Chicken

Roast chicken reminds me of growing up in Kuwait. Almost every week we would get a roast chicken from one of the lebanese / arabic restaurants. I think my family has tried quite a few of the shops since they have lived there for ages LOL, and we know where not to go. Unfortunately in Wellington there aren't any arabic restaurants that have Roast chicken so I make it at home once in a week or two, and I prefer not to buy the rotisserie chicken from the supermarkets. For this particular occasion - I kept it simple: Lemon, Garlic and Parsley for the garnish. Ingredients and flavours that go great together. Serve this with a side salad or a simple pasta meal and it will put a smile on everyone's face

Wash and pat dry the chicken. This next step might gross some of you out, but if you want the chicken to get the flavour you have to do it. Get your fingers under the skin and rub the mashed garlic on to the chicken. The first time you did you probably might think this is crazy weird, but once its cooked and you eat it, you will so do this again. Might be hard to not rip the skin off the chicken, but work on this slowly

Put 1/2 a lemon or even a whole one if you prefer in the chicken's cavity

Drizzle some olive oil, season with salt and pepper and place in the preheated oven

Cook the chicken until every bit of it has cooked through, but don't over cook it!!!! This should take about 90mins or so... keep an eye on that bird

Once done, transfer it to a chopping board, and give it sometime to rest before you carve the chicken. Place the chicken pieces on a serving tray, garnish with chopped parsley and lemon slices
