4pork chops, bone-in
1 tspground white pepper
2 tspbaking soda
2lemongrass, sliced, use portion 5 in from base.
6 clovegarlic, sliced thinly
1/3oil
3 tbsppalm sugar, grated
1 tbspfish sauce
2 tbspoyster sauce

Marinade pork chops for 4-5 hours. If using thick chops, brine instead. adjust accordingly for brine.

In skillet fry lemongrass and garlic until golden. set aside.

grill pork chops and serve topped with fried garlic and lemongrass. serve with that jaew dipping sauce.
