
AMIEs Seared Tenderloin with Mango Sauce

Cooking Instructions

Season meat with salt, pepper and oil seasoning. Marinate for at least 30 minutes in the refrigerator.

Toast garlic in olive oil over low heat. When golden brown, strain garlic and set aside. Reserve a tablespoon of oil. Return remaining oil to the pan, turn up the heat on high and sear meat a few pieces at a time. Do this quickly to keep the meat from becoming tough. Transfer to a serving plate.

To make the mango sauce, puree mango with lemon juice in a blender. Heat reserved oil in a small saucepan. Pour in mango puree and let simmer for one minute. Season with just a hint of salt and pepper.

Served with seared tenderloin garnished with a sprinkling of toasted garlic. Serve, share and enjoy!

Pork tenderloin is a great ingredient. It's inexpensive, so it doesn't blow up your grocery budget (not a small thing these days). One or two loins easily satisfies several people. And, cooked properly, it's a succulent and juicy cut of meat. It also has a relatively neutral flavour, which means you can jazz it up pretty much any way you want. Spices, herbs, and fruit all work.
