Chicken Croquettes (Croquetas de Pollo) Chicken Croquettes (Croquetas de Pollo)
This recipe comes from my mother, Carmen. Well, let’s say it’s a desperate attempt to recreate a childhood favorite. As you know, it’s impossible to perfectly capture the unique taste of our moms’ recipes. For me, croquettes (even though I’ve never quite matched my mom’s) are a deliciously nostalgic treat. Here’s my take on this dish, imperfections and all. I’m sure my sisters have their own versions. One last thing: if you want to make good croquettes, you’ll need patience. The recipe is simple, but it’s important to follow each step and allow for the resting times. Corn Croquettes Corn Croquettes
An easy version of corn croquettes. Simple and rustic, but delicious. Recipe background: Corn cream croquettes made with white sauce are tasty, but they can be hard to shape and the cream sometimes leaks out of the coating, making them tricky. With mashed potato corn croquettes, you can make them quickly and easily without much effort. yukiじるしTranslated from Cookpad Japan -
Ham Croquettes Ham Croquettes
I use skim milk to make these croquettes, but you can use any milk you like. The amount is also a bit approximate—I like them to be very soft, so I sometimes add a little more milk if needed. Carmen RamosTranslated from Cookpad Spain -

Rotisserie Chicken Croquettes - Grandma's Best Croquettes Rotisserie Chicken Croquettes - Grandma's Best Croquettes
These are my boyfriend's grandma's best croquettes (with a little trick for shaping them!). He's loved them since he was a kid, and this summer, at a family gathering, she gave me the recipe. Today, since we had some leftover rotisserie chicken breast, he asked me to make them. The flavor is amazing—you have to try them. I hope to see photos if you give them a shot! Butcher's Croquettes Butcher's Croquettes
I used to love the butcher's style croquettes my mother made for me as a child. I recreated it from memory and turned it into a recipe. The potato filling is already cooked, so all you need to do is to deep fry the croquettes until the coating is crispy. Taste the filling at Step 6, and adjust the seasoning. For 12 croquettes. Recipe by Karin cookpad.japan -
