My grandmother's recipe. A great way to use leftover meat from stew or ham trimmings. You can also make them with fish, mushrooms, or cheese.

My grandmother's recipe. A great way to use leftover meat from stew or ham trimmings. You can also make them with fish, mushrooms, or cheese.

Prepare a dish for the dough and lightly moisten it.

Chop the meat, onion, and parsley if using.

Sauté the onion in olive oil.

Add a tablespoon of butter and cook the meat.

Add the milk and 1 cup of flour. Mix part of the milk with the flour while cold until well dissolved. Add a little nutmeg and chopped parsley if you like.

Transfer the mixture to the stove and stir constantly for about 10-15 minutes until the mixture is cooked through.

Keep stirring so it doesn't stick. The dough needs to cook so it doesn't taste like raw flour.

When bubbles appear and the dough pulls away from the sides, it's ready. I made some with chicken and another batch with ham.

After placing the dough in the dish, cover it with plastic wrap so it doesn't dry out. Let it cool before shaping the croquettes.

Once the dough is completely cold, coat the croquettes with breadcrumbs or panko. I unmold the dough, cut it with a knife, and bread them directly, or shape them the traditional way (they taste the same).
