Fill up a good size pot half way with water enough to boil your chicken with out spilling over and start heating up.

Now rinse of your whole chicken clean out the insides, and cut into pieces if this is to difficult then you can use legs and thighs, i just prefer the whole chicken, cut up your celery and carrots into good size chunks and put it all in the pot.

mince or dice your garlic cloves and add to your chicken along with some S&P, garlic powder, cumin, and chicken bullion cubes, mix and cover and just let it cook

Dice up your onions, Bell Pepper, cilantro and jalapeno (optional), and put aside

in a other good size pan add your oil heat up then add your rice onion,bell pepper, and jalapeno, cook till rice is all brown ,(not burnt, so keep a eye on it)

by now your chicken should be boiling and almost done (notice I said almost), add the rice mixture to the chicken mixture (carefully), add your tomato sauce and diced tomatoes and cilantro mix and cover cooking for another 20 mins or until rice is fully cooked. Let it rest for another 10 mins and enjoy!!!
