Roast peanuts, dry chillies and arhar daal in 1 tbsp oil for 5 mins and then grind and make rough mixture. Then add small amount of salt and amchoor to it

Saute onions, tomatoes, green chillies, ginger garlic paste in 2 tbsp oil and make paste in grinder once slightly cooked.

Slit the baingans (cross slit at bottom) and fill peanut masala paste in it

Shallow fry the baingans, then add the onion tomato paste and cook for sometime
