Peel and dice potatoes and boil in salted water until just tender.

Drain potatoes and return to pot to dry.

After 2 minutes place potatoes on flat baking sheet to quickly cool them.

In a medium mixing bowl, grate onion with hand grater.

Add mustard, mayonnaise, paprika and Tabasco and stir to combine.

Add cooled potatoes to bowl and stir to combine sauce evenly.

Season with salt and pepper to a taste.

Garnish with chopped scallion on top.
