Roasted Asparagus with Lemon Parmesan Bread Crumbs

Heat oven to 400°F.

Lightly grease a large baking sheet.

In a wide, shallow dish or bowl, beat together milk and eggs. Season with salt and pepper.

In a small bowl, toss 1/3 cup each parmesan cheese and seasoned bread crumbs with 1 tsp lemon zest. Spread in a wide, shallow dish, pan, or bowl.

Dunk the stalks a few at a time into the egg mixture, letting any excess drip off, then coat with the crumbs using your hands to pat them on. Place them on the baking sheet.

Bake until golden brown and fork tender, about 20–25 minutes.
