Ingredients

  1. 2 lbchicken breast(no bone or skin)
  2. 1/2 cupflour
  3. 2 tspsalt
  4. 1/2 tsppepper
  5. 8 tbspmargarine, divided
  6. 4 tbspoil
  7. 1/4 tspdried tarragon
  8. 5 tbsplemon juice
  9. 5 tbspchopped parsley
  10. 1lemon, sliced thinly

Steps

  1. 1

    flatten breasts by pounding between pieces of wax paper

  2. 2

    in a plastic bag combined the flour, salt, and pepper, add chicken and shake to coat

  3. 3

    in skillet melt 4 tablespoons of margarine and the oil. Brown the chicken on both sides until just tender. DO NOT OVER COOK. Remove set aside, keep warm.

  4. 4

    sever with more chopped parsley and the sliced lemon.

  5. 5

    melt remaining 4 tablespoons margarine add tarragon, lemon juice, and chopped parsley, heat to simmer. Return chicken to skillet and cover with sauce. simmer few minutes to get chicken hot again.

  6. 6

    serve with more chopped parsley and the lemon slices
