Steps

Wash chicken strips and place into bowl.

Slice lime in half. Set aside grated zest and juice of half the lime.

Finely chop coriander.
- 4
Marinate chicken with zest and juice of 1/2 the lime, dijon mustard, Portuguese chicken spice, rosemary, half the coriander and some freshly ground black pepper.

In a separate salad bowl, place lettuce, cucumber, pepper, carrots and tomatoes.

Heat olive oil and garlic infused avocado oil in a pan

When hot add in cumin seeds and garlic then marinated chicken strips. Season with garlic salt. Allow to cook.

When strips are cooked add remainder of coriander and mix well then add into salad and toss lightly.

Add the avocado slices, almonds and sliced olives to salad.

Squeeze remainder of lime over salad. Season with some freshly ground pepper
