Ingredients

  1. 300 gramsChicken breast
  2. 400 gramsCanned tomatoes
  3. 1/2large onion
  4. 2 clovegarlic
  5. 1 tbspDried basil
  6. 1 tspSalt
  7. 1 tspPepper
  8. 100 gramsSpaghetti
  9. 1 tspOlive oil

    Get your ingredients together, dice the onion, roughly chop the garlic and cut the chicken into bite-sized pieces.

    Heat the olive oil in a pan and cook the onion and garlic on a medium-high heat until the onion becomes translucent.

    Next, add the tomatoes, 1/2 tsp salt and 1/2 tsp pepper. If you use whole tomatoes like I did here, gently break them down with a wooden spoon. Sprinkle in the basil, then lower the heat to medium and let this simmer for a few minutes.

    While the sauce is simmering, lightly brown the chicken in another pan.

    After a few minutes when the chicken is browned, add it to the sauce and mix well. Leave this to simmer for about 5 minutes. Lower the heat if things bubble too much

    Now add your pasta to a pan of boiling water along with 1/2 tsp salt. This should be on a higher heat - you want a rolling boil for pasta.

    When the pasta is cooked, around 7 minutes, drain it well, plate and spoon a generous helping of the chicken tomato mix on top. A quick topping of fresh ground pepper and serve!
