Ingredients

4 servings
  1. 4thick white fish steak (e.g. blue eye, kingfish)
  2. 1/4 cupchopped parsley
  3. 1/3 cupparmesan cheese, finely grated
  4. 1 tsplemon rind, finely grated
  5. 1 tspolive oil
  6. 1olive oil cooking spray
  7. 1lemon wedges

30 mins
  1. 1

    Preheat oven to 200°C.

  2. 2

    Combine breadcrumbs, parsley , parmesan, lemon rind, and salt and pepper in a bowl.

  3. 3

    Drizzle mixture with oil.

  4. 4

    Stir until breadcrumbs are coated in oil.

  5. 5

    Press breadcrumb mixture onto flesh-side of fillets to form an even topping.

  6. 6

    Place fish, skin-side down, onto a baking tray.

  7. 7

    Spray with oil.

  8. 8

    Bake for 15 mins or until crumbs are light golden and fish is just cooked through.
