  1. Mixture
  2. 1 1/2 lbGround beef
  3. 2 largeJumbo eggs
  4. 1/2Sweet onion
  5. 2 cupSeasoned bread crumbs
  6. 1/4 cupOatmeal
  7. 1/2 cupKetchup
  8. 2 tbspMustard
  9. 3 tbspBbq sauce
  10. 1/2 canCubed tomatoes
  11. 3/4 cupShredded cheese
  12. Side
  13. 6 smallRed potatoes (cubed)
  14. 1/4 cupOlive oil
  15. 1 tbspItalian seasoning
  16. 1 tspDryed garlic

Steps

  1. 1

    Preheat oven to 350°F

  2. 2

    Mix meat, eggs and dry ingredients in large mixing bowl. (best to mix with bare, clean hands)

  3. 3

    Place in large casserole dish

  4. 4

    Mix together cubed potatoes, olive oil, and seasonings in separate bowl. Toss together until potatoes are all coated

  5. 5

    Pour seasoned potatoes around meatloaf

  6. 6

    Sprinkle with salt and pepper to taste

  7. 7

    Top meatloaf with ketchup in zig-zag design

  8. 8

    Bake for 35-40 minutes covered with tin foil.

  9. 9

    After 45 min. Remove tin foil, bake for 20 min or until browned. Top with shredded cheese.
