Ingredients

5 servings
  1. 2carrots chopped small dice
  2. 1 stalkcelery chopped small dice
  3. 1/2cooking onion chopped small dice
  4. 2 cupchicken broth (bought or made)
  5. 3 cupwater
  6. 1/4 lblean ground beef
  7. 1egg
  8. 1/4 cupbread crumbs(or just enough to hold it together)
  9. 1ground garlic, salt, fresh ground black pepper, and secret spice( mine is ground sage) to taste
  10. 1 smallpalm full of Oregano
  11. 1/2red pepper diced
  12. 1green onion diced
  13. 1/4 cuppearl barley

Steps

  1. 1

    Pour chicken stock into sauce pan and add chopped veg and simmer

  2. 2

    in the meantime, add all remaing ingredients, except green onion and red pepper, into a bowl and mix well.

  3. 3

    Make tiny one bite meatballs!!(around 20) When all your balls are made drop them gently into the simmering broth to slowly simmer.Add in pearl barley!

  4. 4

    Simmer for at least an hour! Just before serving add green onion and red pepper stir into pot and take off the heat!!

  5. 5

    Serve with crusty bread or buns and enjoy!!!
