Ingredients

  1. 3 cupof mashed potatoes
  2. 2eggs
  3. 1/3 cupsour cream (optional extra for serving)
  4. 1heaping cup shredded sharp cheddar cheese
  5. 2 tbspgrated Parmesan
  6. 2 tbspchopped chives or parsley
  7. 1Salt and black pepper, to taste

Steps

  1. 1

    Directions Preheat oven to 400°F. Lightly grease with butter 8 - 9 of the wells of a nonstick muffin pan.

  2. 2

    In a medium mixing bowl whisk the eggs then mix in the sour cream.

  3. 3

    Stir in both cheeses and the chives.

  4. 4

    Add potatoes and mix well.

  5. 5

    Spoon them into the pan filling the cups to slightly below the top.

  6. 6

    Bake 25- 35 minutes until they pull away from the sides of the cup and are golden brown.

  7. 7

    Remove from oven and let them cool 5 minutes in pan.

  8. 8

    Serve with sour cream if desired.
