In a small bowl, combine chicken, egg whites, 6 teaspoons of the corn starch, & 2 tablespoons of the soy sauce. Mix well and refrigerate for 1 hour

In a skillet heat peanut oil. Chicken mixture and fry for one minute . remove chicken and drain

Pour off all but 1 tablespoon of oil from skillet . Add red pepper . Then add chicken.

And remaining cornstarch and so is the sugar android sherry. Add to chicken mixture.

Stir in peanuts and scallions serve immediately
