heat oil in a pan

cut ripe plantains into half and then lengthwise .each around 1.5 CNS thick

in a bowl mix rest of the ingredients.add water to make a batter not too thick or loose

dip the plantains into the batter

drop into very hot oil.

take out and drain into tissue papers once golden brown

can also b done with raw plantains... just substituents the sugar with a dash of Cayenne pepper
