Ingredients

25 minutes
serves 4 servin
  • Low fat cooking spray
  • 4chicken breasts
  • 1large onion, peeled and quartered
  • 2red peppers,de-seeded and sliced into thin strips
  • 1green pepper,de-seeded and sliced into thin strips
  • 2garlic cloves, crushed
  • 4 tablespoonsbalsamic vinegar
  • 100 mlchicken or vegetable stock
  • 1 teaspoondried oregano
  • Salt and freshly ground black pepper

Steps

  1. 1

    Preheat oven to 180°c, spray a roasting tgmwgtg the cooking spray, place the chicken breast in the tho and season

  2. 2

    Spray a large non stick frying pan with the cooking spray and stir fry the onion for a few minutes. Adding a little water to stop it sticking, until it is softened. Add the peppers and garlic,stir fry for a further minute, then tip the mixture over the chicken breasts in the roasting tin.

    Drizzle over the balsamic timeframe stock, sprinkle with the herbs, then roast in the oven for 20 minutes or until cooked through. Halfway through spoon some of the sauce over the chicken breasts

  4. 4

    Check the chicken is cooked and serve

  5. 5

    Serve with pasta
