Ingredients

  • 1/2 lbuncooked medium pasta shells
  • 1 candiced tomatoes, undrained
  • 1 can (10 oz)enchilada sauce
  • 2 cupswater
  • 1 bunchsliced green onions (save some for garnish)
  • 1 tbstaco seasoning
  • 1 canblack beans, rinsed
  • 1 cancorn, drained
  • 2 cupsfinely chopped cooked chicken
  • 2 cupsshredded sharp cheddar cheese

Steps

  1. 1

    Mix pasta, tomatoes, enchilada sauce, water, green onions, & taco seasoning, heat to boiling

  2. 2

    Reduce heat, simmer uncovered 15 minutes, stiring frequently

  3. 3

    Stir in beans, chicken, & corn, return to simmering, cook 2 minutes

  4. 4

    Remove from heat, stir in cheese garnish and serve
