Ingredients

  1. SOUP
  2. 2 tbspEVOO
  3. 2Carrots, Chopped
  4. 1Onion, Chopped
  5. 2Celery Ribs, Chopped
  6. 1Parsnip, Chopped (Optional)
  7. 2Bay Leaves
  8. 1Salt & Pepper
  9. 6 cupChicken Stock
  10. 1LB. Chicken Breast, Chopped
  11. 1Wide Egg Noodles

Cooking Instructions

    Large pot over med. heat, add EVOO. Add vegetables to pot in order listed.

    Add bay leaf & season vegetables with salt & pepper. Add stock to pot, bring liquid to boil. Add diced chicken, return soup to boil & reduce heat to medium. Cook chicken 2 min., add noodles. Cook until tender, remove soup from heat.This is a thick soup. Add up to 2 C. water if like Chicken soup with lots of broth.
