I ate it as soon as I took the pic....so it was still hot...the shrimp were so huge I could only eat 5 of them plus the oysters & the dipping sause was spicy & creamy.....the dish was delicious...

Ingredients

  1. 1 lbBacon
  2. 2 lbJumbo Shrimp
  3. 8 ozGoat Cheese
  4. 8 ozCream Cheese
  5. 4 ozScallions

Cooking Instructions

  1. 1

    place bacon in cooking tray & cook in oven at 350º until bacon is half cooked....bacon must still be soft not hard..!!!

    in bowl combine goat cheese, cream cheese & finely chopped scallions...mix well

    Shrimp must be peeled, cleaned & cut open in the center.

    with spoon place teaspoon portion of cheese/scallion mix into the cut of the shrimp...wrap tight with piece of half cooked bacon & seal with a toothpick....(toothpick should be soaked in water for 20 minutes)

    cook on grill until shrimp turn color & are done....should only take couple of minutes on each side on medium flame!

    eat & enjoy while hot!!!

    * if desired you may add quarter teaspoon of cayenne pepper to cheese/scallion mix for lil spicy heat

    served with a Wasabi Horseradish mustard & mayonnaise dipping sauce

    & served with Raw Oysters on the half shell for an appetizer
