Steps

Cut the vegetables as shown in the picture. Also cut potato into small pieces. Keep the vegetables aside!

In a non-stick pan take oil for tempering and heat it. Add the the ingredients of tempering. After the rai starts to crackle add the chilli-ginger-garlic paste to it. Cook for some time and add chopped onion and cook till it becomes translucent. Add haldi powder, red chilli powder and dhaniya-jeera powder to it.

Cook the Soya granules as the instructions given on the packet. Wash it with water for 3-4 times and keep it aside.

Crush the tomatoes in mixture and keep aside.

Add the vegetables to the pan and cook for some time

Now add the tomato puree and crushed Soya granules to the veggies.

Mix everything properly and cook till the vegetables are cooked. Finally garnish with chopped spring onions and serve it!
