Ingredients

  1. 2 headsbroccoli chopped
  2. 1/4 cupbutter
  3. 1/4 cupflour
  4. 1onion chopped
  5. 2 cupshalf and half
  6. 2 cupschicken or vegetable broth
  7. 1/2 cupcarrots shredded in food processor
  8. 2 cupsshredded cheddar cheese
  9. Salt & pepper
  10. Bread bowl for serving optional

Steps

  1. 1

    In a large pot sauté butter, carrots, and onion for a few minutes

  2. 2

    Add flour, then slowly stir in half and half and broth, bring to a simmer for 5-10 minutes on low heat

  3. 3

    Mix in broccoli, salt, and pepper, simmer 10-15 minutes on low heat

  4. 4

    Add cheese, stir until melted and serve
