Pre heat the oven to 200 C/400 F.

Peel and cut in half the potatoes.

Boil for about 12-15 minutes in salted water. A Knife Blade should go in without any resistance once cooked.

In a ceramic oven proof dish put 3 tsp of olive oil and the goose fat and then place in the pre heated oven to heat ready for the potatoes.

Drain the potatoes once cooked.

To fluff them put them back in the empty pan and shake it gently.

Add the potatoes to the heated dish.

Then add a pinch of rock salt, the black pepper and drizzle the remaining olive oil over the potatoes. Use a table spoon to gently coat the potatoes in oil.

Roast the potatoes for 45-50 minutes.

About every 15 minutes turn and coat in the oil the potatoes using a tablespoon.
