  1. 4eggs
  2. 3/4 cupvegetable oil
  3. 1 1/2 cupwhite sugar
  4. 2 tspvanilla extract
  5. 2 cupwhole wheat pastry flour
  6. 2 tspbaking soda
  7. 1 tspbaking powder
  8. 1/2 tspsalt
  9. 2 tspground cinnamon
  10. 3 cupgrated carrots
  11. 1 cupchopped pecans
  12. FROSTING
  13. 1/4 cupbutter, softened
  14. 1(8 oz. ) package Neufchatel cheese, softened
  15. 2 cupconfectioners' sugar
  16. 1 tspvanilla extract
  17. 1 cupchopped pecans

    Preheat oven to 350 ° F. Grease and flour a 9x13-inch pan.

  4. 4

    In a bowl, beat together eggs, oil, white sugar, & 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt, & cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.

  5. 5

    Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

  6. 6

    FROSTING: In a medium bowl, combine butter, Neufchatel cheese, confectioners' sugar, & 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.
