Sweet and Sour Mango Sauce

When its the holidays or just any random day and there's plenty of meat eating going on, you need a variety of sauces to accompany them. Not to heavy, not too light. The perfect balance.

When its the holidays or just any random day and there's plenty of meat eating going on, you need a variety of sauces to accompany them. Not to heavy, not too light. The perfect balance.
Steps

In a small saucepan fry the onions till golden brown, don't burn. Add in the garlic and stir.

Add the tomato and the tomato paste until softly mashed

Add in the mango (diced or blended)

Mix it up then let cook for about 3-5 minutes

Add in the tamarind extract and the chilli
- 6
Let it cook on low heat till it thickens a bit.

Add salt to taste

This sauce was perfect when we had it with matumbo (offal) but it can be served with nyama choma, dry fry or fried chicken
