  • 1 cupwheat flour
  • 1 cupblue corn flour
  • 1 tbspcornstarch
  • 2/3 cupgranulated sugar
  • 1 tbspbaking powder
  • 1 tspbaking soda
  • 1/2 tspsalt
  • Wet ingredients
  • 1 1/4 cupmilk
  • 2 largeeggs
  • 1/3 cupcanola oil
  • 8 ozblue berries

    Combine dry ingredients

    Mix in wet ingredients quickly

  3. 3

    Pour into lined muffin pans. Drop blueberries on top. 1/3 full and (optional) top with a sugar crumble

    Bake @ 350°f for 18-20 minutes
