Ingredients

  1. 1 canchickpeas
  2. s&p
  3. Juice of 1 lemon
  4. 1-2tblsp natural yoghurt
  5. 1 clovegarlic
  6. Heaped teaspoon tahini
  7. Cayenne pepper
  8. 160 gwholewheat flour (2 breads)
  9. Fresh herbs you fancy for garnish (I use oregano on the tomato and thyme on the hummus)
  10. Evoo
  11. Chopped toms, seasoned, dressed w vinegar
  12. Feta cheese
  13. Chilies finely sliced
  14. (Optional) jarred peppers/capsicum

Steps

  1. 1

    Chickpeas in blender, s&p, lemon juice, yoghurt, garlic, tahini, cayenne pepper and whizz to smooth

    Flour in bowl, pinch salt, add water a little at a time and spoon mix til it comes together as a dough

    Roll out half dough (1 flat bread) little oil and put in hot griddle, couple of mins per side

    Serve hummus topped with chili, sprinkle of cayenne and glug of evoo. Add fresh thyme if you have any

  5. 5

    (Optional) add jarred red peppers to half the hummus and blend for a sweet pepper hummus dip

  6. 6

    Serve with bread, feta, tomato salad (chopped and seasoned with eco and herbs).

I'm vegetarian & allergic to eggs, but my wife eats meat. I prepare all meals, often converting meat recipes in to vegetarian ones. Many of my recipes show measurements for both meat and vegetarian versions, often for the same meal... simply cooking a common sauce in one pan then using seperate pans for meat and veg to combine with sauce when served
