This is rich, but pretty simple. And obviously, amazingly delicious :)

Butterfly your chicken breast, cutting all the way through to make 2 pieces. Pound them out to about 1/4 inch thick

Place 1 tbsp of boursin on each, then Swiss (divide the 1/4 cup into 2) then coat with salt, pepper, paprika. Roll it up! Use kitchen twine or toothpicks to hold into place.

Preheat oven to 350 degrees.

In an oven safe skillet add a bit of oil on medium high heat.

Add chicken, seam side down, cook about 2 min, flip. Add Dijon, broth and butter and pop in the oven for about 25-30 min, depending on how thin your chicken is.

Garnish with parsley!

If you want a thicker sauce, add about 1/4 cup heavy cream or half and half when you add the broth. Enjoy!
