Ingredients

  1. 1/4 cupExtra virgin olive oil
  2. 1 lbItalian pork sausage
  3. 2Red bell peppers
  4. 2Yellow onions sliced
  5. 1 tspKosher salt
  6. 1 tspGround black pepper
  7. 1/2 tspDried oregano
  8. 1/2 cupChopped fresh basil leaves
  9. 4Garlic cloves chopped
  10. 2 tbspTomato paste
  11. 1 cupMarsala wine
  12. 1 can(15 ounce) diced tomatoes

Cooking Instructions

    Heat oil in a heavy large skillet over medium heat. Add the sausage and cook until brown on both sides, 7 - 10 minutes. Remove from pan and drain.

    Keeping the pan over medium heat, add peppers, onions, salt and pepper and cook until golden brown, about 5 minutes. Add oregano, basil and garlic and cook for 2 more minutes. Add tomato paste and stir. Add Marsala wine and tomatoes, stir to combine. Bring to simmer.

    Cut sausage into 4 - 6 pieces each, about 1 inch cubes, add sausage back to the pan and stir to combine. Cook until sauce has thickened, about 20 min.

    Serve in bowls with bread
