preheat oven to 180 c. Grease 7 cup ovenproof dish

Beat raw caster sugar, butter and citrus rinds with an electric. mixer for 5 minutes or tell combined. Add egg yolks gradually., beating well after each addition. Add a little flour and milk alternately, beating to form a smooth batter. it may look like too much milk, but this helps to form the lemony sauceFold in the lime and lemon juice with a spatula.

In a separate bowl, whisk egg whites with a pinch of salt until stiff peaks form. Fold 1/3. of the eggwhites through batter, add remaining eggwhites and fold in until just combined.

Pour mixture into prepared dish, place in a deep roasting pan and pour enough hot water into pan to come halfway up side of dish. Sprinkle with extra caster sugar. Bake 40-45 minutes or until puffed and golden. Serve with cream, or ice cream. Serves 6
