Ingredients

Serves 5 servings
  1. 2.2 lbsbeef stew meat (about 1 kg)
  2. 1 pieceonion
  3. About 2.2 lbs (1 kg) mixed vegetables, cut up:
  4. Zucchini
  5. Chayote squash
  6. Potatoes
  7. Green beans
  8. Carrots
  9. Potatoes
  10. Cabbage
  11. Corn on the cob, sliced thin
  12. 1 handfulchickpeas
  13. 1 sprigmint
  14. 1 sprigcilantro
  15. Salt, to taste

Steps

  1. 1

    Wash the beef thoroughly and place it in a large pot with water, salt, and the piece of onion. Cover and bring to a boil.

  2. 2

    Peel the chayote, potatoes, and carrots.

  3. 3

    Wash all the vegetables well and cut them to your desired size.

  4. 4

    Check the beef as it cooks; it will take a while to become tender.

  5. 5

    Once the beef is tender, add all the remaining ingredients and cover again.

  6. 6

    Let cook for just a few minutes, as the vegetables soften quickly. Check the salt.

  7. 7

    When the vegetables are tender, the soup is ready.

  8. 8

    Serve hot, and enjoy with a spicy salsa if you like.
