Wash the beef thoroughly and place it in a large pot with water, salt, and the piece of onion. Cover and bring to a boil.

Peel the chayote, potatoes, and carrots.

Wash all the vegetables well and cut them to your desired size.

Check the beef as it cooks; it will take a while to become tender.

Once the beef is tender, add all the remaining ingredients and cover again.

Let cook for just a few minutes, as the vegetables soften quickly. Check the salt.
