I started this recipe to save money and bring a good lunch from home, but it was so good that it quickly evolved into a real gourmet experience. As the season changed, different produce became available and now, I'll make it with whatever is freshest. You can even bulk it up with tasty additions like bacon or ham.

Ingredients

  1. Filling
  2. 1 cupsliced leeks
  3. 1/2 cupgrated cheddar cheese
  4. 1 clovecrushed fresh garlic
  5. 1/2 cupminced sweet peppers
  6. 1/2 cupsliced fresh mushrooms
  7. 1 bunchfresh cilantro chopped coarse
  8. 1/2 cupsliced black olives
  9. 1/4 cupjulienned sun-dried tomatoes in olive oil
  10. 1/2 cupmilk
  11. Topping
  12. 1 tspchopped fresh chives
  13. 1 tbspfresh oregano
  14. 1/2 tspsummer savoury
  15. 1/2 cupreal parmesan cheese
  16. 1 tbspfresh rosemary
  17. Pudding
  18. 6 slicestale bread
  19. 6eggs

Steps

1 hour
  1. 1

    Preheat oven to 325°F

  2. 2

    Line an 11x14x3" deep cake pan with slices of stale bread.

  3. 3

    Beat together eggs, milk, oregano and cilantro.

  4. 4

    Pour half the milk/egg mix over the bread

  5. 5

    Add the filling, layering as you go along. Finish with the grated cheddar.

  6. 6

    Pour the remainder of the egg mix over the entire dish. Add the topping mix and Parmesan.

  7. 7

    Place in oven for 30 - 40 minutes or until the egg sets and top begins to brown.

  8. 8

    Remove from oven and allow to stand 10 minutes before serving.
