  • 6chicken thighs
  • 4 tbsflour
  • 2 tbsbutter
  • 1shallot
  • 1 packmushrooms
  • 1/4 cupwhite wine
  • 1 tbscognac
  • 500 mLchicken stock
  • 1 tbstarragon
  • 1 tbsparsley
  • salt
  • pepper

Steps

  1. 1

    1. Brown chicken in skillet (flour, salt, pepper, butter)

  2. 2

    Saute mushrooms 1-2 min

  3. 3

    Sweat shallots

  4. 4

    Flambe cognac

  5. 5

    Deglaze with wine -> reduce

  6. 6

    Add chicken stock -> reduce

  7. 7

    Add butter, tarragon, parsley

  8. 8

    Combine with chicken
