Steps

Preheat the oven to 400° F. Lightly grease all 12 muffin cups with coconut oil.

Scrub sweet potatoes and place in a baking pan. Rub with coconut oil. Bake for 25 minutes or until semi-tender.

Once potatoes are cool enough handle, peel the skin leaving just enough to grip at one end. Use the grater to shred the sweet potato into a medium bowl. Season with salt and pepper.

Press the sweet potato mixture into each of the 12 muffin cups. Lightly brush with coconut oil. Bake for 15 minutes.

Crack one egg into each sweet potato nest. Season with salt and pepper. Bake another 10 minutes.
