Ingredients

  • dough
  • 8 ozUnsalted butter, browned
  • 2 3/4 cupAll purpose flour
  • 2 1/2 tspCream of tartar
  • 1 tspBaking soda
  • 1 tbspCinnamon, for dough
  • 3/4 tspNutmeg, freshly ground if possible
  • 1/2 tspSalt
  • 2 eachEggs
  • 1 tbspMilk
  • 1 cupGranulated sugar, for dough
  • 1/2 cupLight brown sugar, packed
  • rolling
  • 2 tspCinnamon, for rolling
  • 3 tbspGranulated sugar, for rolling

Steps

  1. 1

    Brown the butter and pour into stand mixer. Lightly beat with paddle to help cool it down. It should get very cool before continuing.

  2. 2

    Soft together flour, cream of tartar, baking soda, cinnamon, nutmeg, and salt.

  3. 3

    Whisk eggs and milk.

  4. 4

    Add granulated sugar and brown sugar to butter, it should cream a bit.

  5. 5

    Turn mixer on low and stream in the egg mixture, then medium speed to combine.

  6. 6

    Add flour mixture in 3 parts

  7. 7

    Refrigerate at least 1 hour but up to 24 hours.

  8. 8

    Preheat oven to 400°F.

  9. 9

    Stir together cinnamon and granulated sugar in bowl. Use small cookie scoop and roll in mixture.

  10. 10

    Bake 9 to 12 minutes.
